Start digging into the hill here for the entrance into the first cave system. It's not particularly rich in resources, but it has some nice scenery deep underground. You can also dig straight through to the other side of the hill for a beach with a little bit of clay.
X: -167 / Y: 62 / Z: -59
This is the entrance to the second cave system, which is, in a word, massive. It has plenty of every ore, tons of lava, and three(!) dungeons. Just be careful; falling in the lava is very hard to avoid in some areas without a lot of tunneling.

This is a network of underground waterfalls found deep in the first cave system. One of these waterfalls leads straight down into a lava pool, which has some diamond and redstone nearby.
